It’s winter, and your family has a lot of frozen mixed vegetables.
You know, for their dinner.
They could be frozen for a special occasion, or you could cook them up and use them as a filling for soup or a side dish.
But that doesn’t always work.
A lot of times, you need something that’s frozen and doesn’t take too long to make.
Here’s what you need: A bag of frozen kale.
Freshly ground black pepper.
Black pepper flakes.
And maybe a little salt.
You can also use frozen spinach or zucchini, or even some frozen broccoli, if you don’t have any left over.
You can also add some chopped onions and celery to make it a little more nutritious.
The vegetables can be frozen until they’re firm, and then thawed.
Cut the kale into wedges and then cut the white flesh into small pieces.
Add it to a blender and blend until the kale is pureed.
Add a little garlic and pepper to taste.
Add some salt and pepper and blend well.
Add the vegetables and some water to the blender and puree until smooth.
Add more water if the kale seems dry.
Add any remaining vegetables, if desired, and blend again.
Add the rest of the vegetables, along with the remaining liquid and blend the kale until smooth, like a salad.
Serve with mashed potatoes or baked potatoes.
For a delicious soup, you can add frozen mixed greens or carrots.
Add frozen peas or cauliflower to the mix for an even thicker soup.
If you want a bit more texture, add a few fresh berries or dried cranberries, or add a little fresh pineapple for a nice sweetness.
The possibilities are endless.
You could also use it to make soup with.
