If you’ve ever cooked with chicken, you’ve probably made your own broth from scratch.
It’s been done before, but never before had the meatballs.
Now it’s time to give it a go with some veg.
This time, the meatball soup is a mixture of ground chicken, carrot, celery, garlic, and onion.
If you’re a vegetarian or vegan, you might think you’ve already cooked it up, but you’ve only made your first batch.
Here’s what you need to know: Ingredients for the soup: 1 chicken breast, cut into cubes (about 1 inch in diameter) 1 cup chicken broth (1-1/2 cups water) 1 tbsp.
chopped celery seed 1/2 cup garlic powder 1/4 cup parsley powder 2 tsp.
salt 1/3 cup water 3 cups vegetable broth (2 cups) 1 large onion, sliced 1 cup carrots, sliced 2 cups celery root, sliced 3 cloves garlic, crushed (optional) 1/8 cup olive oil 1/1 tsp.
cayenne pepper Directions: Place chicken breasts in a large bowl.
Add water to cover.
Add celery seeds and salt.
Let sit for 20 minutes.
Add garlic powder and parsley.
Cook until the celery and garlic are tender.
Drain the chicken broth and return it to the bowl.
Combine the vegetable broth and broth with the onion, carrots, celeries, garlic and parsleys.
Add the chicken to the broth.
Add 1 cup water and simmer until chicken is cooked through.
Serve with extra lemon juice, sliced bread, and a dollop of cheese on top.
